Lohri, a harvest festival celebrated in the northern parts of India, is a time to celebrate the arrival of spring and the bounty of nature. Ingredients For Amritsari Macchi Recipe 

  • 1600 gms Singhara Fish
  • 200 gms mustard oil 
  • 200 gms corn flour 
  • 7 gms kasuri methi
  • 250g besan 
  • 20 gms garam masala 
  • 20 gms chilli powder 
  • 20 gms jeera powder 
  • 100 gms lemon juice 
  • 100 gms garlic 
  • 100 gms ginger 
  • 25 gms ajwain 
  • 3 eggs
  • Salt to taste 

How To Make Amritsari Macchi Recipe  

  1. Cut the Singhara fillets into small pieces and marinate them in a mixture of mustard oil, lemon juice, ajwain, chilli powder, and ginger garlic paste. Put aside. 
  2. Make the second marination with a combination of besan, corn flour, chilli powder, eggs, salt, lemon juice, ginger garlic paste, kasoori methi, jeera powder, and garam masala. If necessary, thin the paste with a small amount of water. It should be red in colour. 
  3. Fish should be marinated for a full half hour and then refrigerated. 
  4. Use skewers to help you cook in a tandoor. It's a special method since deep-frying fish is a common ingredient in Amritsari dishes. 
  5. Serve with mint chutney and some salad.

2. Main Course: Berni Ki Nalli Recipe

  • 800 gms Lamb Shank
  • 100 ml Lamb stock 
  • 850 gms tomato puree 
  • 500 gms chopped onions 
  • 50 gms red chilli powder
  • 30 gms coriander powder
  • 20 gms turmeric powder 
  • 50 gms brown onion paste 
  • 50 gms ginger garlic paste 
  • 50 gms cashew nut paste
  • 75 gms yoghurt 
  • 100 gms ghee 
  • 100 ml oil 
  • 75 gms cream 
  • 1 gms saffron 
  • 10 gms rose water 
  • 10 gms keora water
  • Salt to taste

How To Make Berni Ki Nalli Recipe 

  1. Fry the lamb shanks in oil.
  2. Heat oil and put garam masala in Matki (berni). After letting it crackle, add the cut onions.
  3. Cook it till the colour turns light golden. Sear the lamb shanks after adding them. 
  4. Cook it after adding the ginger-garlic paste. 
  5. Then add the dry spices powder. 
  6. Add the fried cashew paste and the brown onion. Use lamb stock to cook it.
  7. After that, add the yoghurt and continue cooking. After adding the lamb stock, boil the lamb shanks until they are tender. Now add the tomato puree.
  8. After making sure everything is seasoned, drain the gravy three times. 
  9. Add cream, saffron, chopped coriander, rose water, and keora water at the end.

3. Dessert: Kulfi Falooda Recipe

Ingredients For Kulfi Falooda Recipe 

  • 3L full cream milk 
  • 200 gms falooda 
  • 150 gms sugar 
  • 2 pinch Kesar 
  • 5 gms cardamom powder
  • 30 gms chopped pista
  • 10 ml rose syrup
  • 20 ml kewar water 

How To Male Kulfi Falooda Recipe

  1. Add the sugar, kewra water, cardamom, diluted kesar, and chopped pista, and boil the milk until it reduces to half. 
  2. Carefully cool the mixture in an ice bath by stirring well.
  3. Now fill moulds well, then freeze at a -19 degrees for at least 48 hours. 
  4. To serve, gently remove the kulfi from the mould and place it on the falooda. Garnish with rose syrup and nuts.
