Festive season: Whip up Roshni Chopra’s cucumber cups recipe to elevate the celebrations - The Indian Express

As the festive season approaches with Dusshera and Diwali just around the corner, it’s the perfect time to spruce up your home with festive decorations, seek blessings from deities, and adorn yourselves in exquisite ethnic outfits. But don’t forget the culinary delights that can truly elevate the celebratory atmosphere.

While tasty fried food and sweets can be a go-to dish during these festive times, it might not be the ideal choice for your health. So, if you’re searching for a healthy and tasty recipe that captures the vibrance of the festive season, look no further.

Known for sharing everything from fitness secrets to healthy recipes on her social media, actor and influencer Roshni Chopra recently shared an easy and nutritious recipe for cucumber cups that can serve as a delectable snack or appetiser for various occasions. The best part is that you can even eat it while watching the World Cup cricket matches, too, without feeling too indulgent. Here’s how to make it:

Ingredients:

  • Cucumbers (as per serving size)
  • Hung curd
  • Garlic
  • Green chili
  • Salt and pepper for seasoning
  • Roasted and crushed peanuts
  • Chilli flakes

Method:

  1. Clean and chop a medium-sized cucumber.
  2. Remove the ends.
  3. Scoop out the center with a spoon, but leave enough at the bottom to form a cup.
  4. Use hung curd, garlic, green chili, salt, and pepper to make a filling.
  5. Garnish with roasted and crushed peanuts and chili flakes.

Tip: For non-vegetarian fillings, you can use chicken and mayo or tuna dip as well.
